Zusammenfassung Hexamethylentetramin-[Hexa]-Proben verschiedener Herkunft — Hexa DAB 7 (Fa. Merck), Hexa pro anal. (Fa. Merck), Hexa (Eigenpräparat), Hexa (unbekannter Herkunft) — wurden mit GC- und GC/MS-Analyse auf die Gegenwart flüchtiger organischer Verbindungen untersucht. Formaldehyd, Aceton, Methylamin, Trimethylamin-N-oxid und Chloroform konnten gaschromatographisch nachgewiesen und teilweise durch GC/MS-Analyse abgesichert werden. Sekundäre und tertiäre aliphatische Amine waren in keiner der Hexa-Proben zugegen. In-vitro-Nitrosierungsexperimente der Hexa-Proben mit Natriumnitrit in saurer Lösung führten zu keiner Bildung von Dimethylnitrosamin. Nur aus dem Hexa-Präparat unbekannter Herkunft mit höherem Gehalt an Trimethylamin-N-oxid konnte die Bildung von Dimethylnitrosamin nachgewiesen werden. Das Lagern einer reinsten Hexa-Probe (frei von flüchtigen Bestandteilen) bei 4° C im Dunklen oder bei 20° C am Tageslicht in geschlossenen Glasgefäßen über einen Zeitraum von 6 Monaten führte zu keiner Bildung von flüchtigen organischen Verbindungen. Eine mögliche Wiederverwendung von Hexa als Lebensmittel-Zusatzstoff aus der Sicht der Nitrosamin-Problematik wird erörtert.

Summary Hexamethylenetetramine-[Hexa]samples of different origin—Hexa DAB 7 (Merck), Hexa p. a. (Merck), Hexa (synthesized), Hexa of unknown origin—were analyzed for the presence of volatile organic compounds by GC- and GC/MS analysis. The presence of formaldehyde, acetone, methylamine, trimethylamine-N-oxide and chloroform was established by GC analysis and partially confirmed by GC/MS analysis. Secondary or tertiary aliphatic amines were not present in any of the Hexa-samples. No detectable amounts of dimethylnitrosamine were formed during in vitro nitrosation experiments with Hexa-samples and sodium nitrite in acidic solution. Dimethylnitrosamine formation was established only with the Hexa-sample of unknown origin, which had a greater content of trimethylamine-N-oxide. During the storage of pure Hexa (free of volatile organic compounds) at 4° C in darkness or at 20° C in daylight in closed glass vessels for six months no volatile organic compounds were formed. A possible readmission of hexamethylenetetramine as food additive from the viewpoint of the nitrosamine problem is discussed.
