Zusammenfassung Mit Hilfe der13C-NMR-Spektroskopie können im Wein zahlreiche Zucker (Glucose, Fructose, Galaktose, Rhamnose, Trehalose, Arabinose, Xylose, Ribose), Zuckeralkohole (Inosit, Mannit) sowie Zuckersäuren (Galakturonsäure, Glucuronsäure, Gluconsäure) ohne vorherige Auftrennung nebeneinander strukturspezifisch ermittelt und quantitativ bestimmt werden. Durch Zugabe einer definierten Menge eines internen Standards (1,3-Propandiol) können die Gehalte aller Komponenten, ohne Erstellung von Eichwerten, errechnet werden. Komponenten mit Gehalten über 1 g/l werden direkt aus Wein, Komponenten mit Gehalten unter 1 g/l aus Weinkonzentraten (Rückstand der Vakuumdestillation) bestimmt.

Summary With the aid of13C-NMR-Spectroscopy, numerous wine sugars (glucose, fructose, galactose, rhamnose, trehalose, arabinose, xylose, ribose), sugar alcohols (inositol, mannitol) and sugar acids (galacturonic, glucuronic, and gluconic acid) can be ascertained simultaneously, quantitatively, and on a specific structural basis in a single run. By the addition of a known amount of an internal standard (1,3-propanediol), the concentrations of all compounds can be calculated without calibrating the individual compounds. Compounds with concentrations exceeding 1 g/l can be determined directly in wine, while those with concentrations below 1 g/l can be measured in wine concentrates (residue of a vacuum distillation).
