Description: The principle objective at Site 118 was to sample a formation in the Bay of Biscay which had been tentatively ascribed to Lower Cretaceous or older sediments. However it was not clear that this corresponding seismic layer was not in fact part of an extremely irregular igneous basement structure, at least at the western end of the bay.

Description: The present paper describes the Variability of the American Monsoon Systems (VAMOS) Ocean–Cloud–Atmosphere–Land Study (VOCALS), an international research program focused on the improved understanding and modeling of the southeastern Pacific (SEP) climate system on diurnal to interannual time scales. In the framework of the SEP climate, VOCALS has two fundamental objectives: 1) improved simulations by coupled atmosphere–ocean general circulation models (CGCMs), with an emphasis on reducing systematic errors in the region; and 2) improved estimates of the indirect effects of aerosols on low clouds and climate, with an emphasis on the more precise quantification of those effects. VOCALS major scientific activities are outlined, and selected achievements are highlighted. Activities described include monitoring in the region, a large international field campaign (the VOCALS Regional Experiment), and two model assessments. The program has already produced significant advances in the understanding of major issues in the SEP: the coastal circulation and the diurnal cycle, the ocean heat budget, factors controlling precipitation and formation of pockets of open cells in stratocumulus decks, aerosol impacts on clouds, and estimation of the first aerosol indirect effect. The paper concludes with a brief presentation on VOCALS contributions to community capacity building before a summary of scientific findings and remaining questions.

Notes: Summary A programme of home-based intervention with two groups of pre-school severely subnormal children and their parents has produced apparently contradictory results; frequently visited children after initial superiority over infrequently visited children, later showed a deceleration in intellectual growth. Less frequently visited children conversely showed a rise in performance after an initial decrement. The interpretation is advanced that parents in the latter group were less dependent on the visiting therapist, and more able to take positive action to assist their children, and improve their own situation.

Notes: Summary A 3-year intervention programme with parents of severely subnormal pre-school children is described. Two experimental groups, one visited individually at 2-week intervals and one similarly at 8-week intervals are compared with a third distal contrast group receiving no intervention. Analyses of successive IQ changes in all three groups showed that the less frequently visited group made greater progress after 2 years than that receiving more visits but that this difference disappeared after 3 years. The contrast non-intervention group made fewer gains overall than either of the two experimental groups. Four questions are discussed: the maintenance of early gains, the influence of social class, the optimal level of intervention and the meaning of successful intervention to parents. Evaluation of the project is concerned with experimental efficiency, methodology, and the problems of partnership.

Notes: Restuctured turkey patties, with three levels of added skin (none, 5%, 10%) were made using three binding treatments. The adjuncts were (a) sodium-salt (0.88% NaCl, 0.35% NaPO4); (b) algin/calcium (0.6% sodium lactate, 0.5% encapsulated lactic acid/sodium lactate, 0.1% CaCO3); and (c) algin/calcium and sodium-salt combination (the sodium salts combined with the algin/calcium formulation). The treatments were evaluated by a sensory panel for perceived tenderness, juiciness, chewiness, as well as raw and cooked tensile strengths (a measure of perceived bind strength). Proximate and shear force evaluations were also performed. Addition of 5% turkey skin did not affect the sensory attributes or the shear force values. Addition of sodium salts had a detrimental effect on the bind strength of the combination formulation. However, both formulations with added sodium salts had higher moisture content and were perceived to be more juicy than productss restructured with algin/calcium.

Notes: Restructured beef steaks, formulated with different beef particle sizes, fat content and binder levels, were evaluated with selected marketing factors by 30 consumers. Conjoint analysis was applied to consumers’hedonic scores and statement of purchase intent for raw and cooked steaks. Product preference, packaging and brand had significant (P 〈 0.05) impacts on hedonic scores for raw products. Price was an additional important factor in purchase intent. Parcooked products, only product preference was important for both hedonic rating and purchase intent. When products were not present, conjoint measurement indicated that nutritional information, price and brand influenced (P 〈 0.05) hedonic responses.

Notes: A method was developed to isolate and quantify uranic acid(s) of alginate or pectin added at various concentrations to lean (5–7% crude fat) ground pork. The method used an Aminex HPX-87-H+ column, isocratic 0.009N H2SO4 eluent and ultraviolet detection. For regression equations derived from mean uranic acid concentrations to predict percentage of alginate or pectin, R2 values were 0.99 for total uranic acids (alginate) and 0.97 for galacturonic acid (pectin). Reproducibility was 84% for alginate and 94% for pectin contents. Recoveries were: alginate 85% and pectin 80%.

Notes: Structured beef was prepared with eight combinations of the ingredients (sodium alginate, calcium carbonate, lactic acid/calcium lactate) used to bind meat with the algin/calcium gelation mechanism at nine pH values (4.1–6.4) in order to evaluate their influence on its physical and sensory characteristics. Products with alginate alone were similar to samples from the treatment without binders. The combination of alginate/calcium/lactate gave products of higher values (P〉0.05) for parameters such as hardness in the raw state, bind and penetration than all other treatments. Decreasing pH values increased raw and cooked product hardness and penetration force. Products of pH values 5.7–5.8 were superior to other treatments in bind scores evaluated by a sensory panel.

Notes: Koluchova's on-going study of twin boys who suffered extreme deprivation between 18 months and 7 yr, and who thereafter received remedial treatment, is discussed in the context of relevant literature. Malnutrition, cruelly, neglect and considerable isolation over 51/2 yr did not predestine them permanently to the condition of severe subnormality which they manifested on discovery. Their greatly accelerated development confirms similar work and sheds some light on the interaction of constitutional and environmental factors in the formation of human characteristics. Results underline the inadequacy of theories stressing the over-riding importance of early experiences for later growth.
