In most regions, it contributes only a small part to the overall meat and food supply, but for reasons of animal welfare and sustainability it is sometimes considered an alternative to meat from farmed animals. Despite differences in game species, ante mortem conditions (free-range or fenced; wild or semi-domesticated), hunting or harvesting procedures and further handling of the carcass, there are common requirements as regards meat safety and quality. Whereas meat hygiene and safety have been an issue in game meat for export/import for a long time, primary production, domestic supply and direct supply to the consumer have recently been addressed by legislation and these sectors still present unresolved questions and challenges. This book combines 24 contributions presenting the view of experts in game meat hygiene and quality. They address four main topics: i.e. 'hygiene and microbiology', 'epidemiology', 'risk assessment and management' and 'muscle biology and meat quality'. In addition to contributions on this topic by authors from eight European countries, a South African perspective is provided, thus representing the standpoint of a major game meat exporter. This volume is the first in a series on safety and quality assurance along the game meat chain, following an approach 'from forest to fork' and is targeted at scientists in academia and industry, graduate students as well as at governmental officials in veterinary public health and food safety.

    Description / Table of Contents: Increased consumers´ demand for game meat is driven by various motivations. In order to fulfil this demand for safe, wholesome and nutritious meat, management of wild game and establishment of adequate supply chains are required. Identification and assessment of hazards of biological and non-biological origin help to design and implement effective control measures. This requires cooperation of the stakeholders, of food safety authorities and scientists. Game meat safety extends from the wildlife-human interface to wildlife-livestock interactions, as regards transfer of pathogenic agents or transfer of residues. Thus, assurance of game meat hygiene is a multidisciplinary task, and involves tackling a variety of safety and quality issues for a number of species under diverse living conditions and modes of harvesting. This is reflected in the contents of this volume, with 19 contributions on free-living or farmed game and on invasive species, namely the warthog in South Africa. This volume is the third in a series on safety and quality assurance along the game meat chain, following a 'from forest to fork' approach. Like its predecessors, it is targeted at scientists in academia and industry, graduate students as well as to governmental officials in veterinary public health and food safety.

    Description / Table of Contents: Game meat, previously often considered as an 'exotic' food, or being relevant only in remote regions, is becoming increasingly popular. In order to provide sufficient quantities of nutritious, wholesome and safe game meat, a number of measures have to be implemented along the food chain- from the forest/field or fenced area where the animals are harvested, to the point of consumption. These involve monitoring and control of diseases of game animals transmissible to man, technology and hygiene of game meat processing and specifics of products manufactured from game meat. This book combines 30 contributions of various experts in the field, addressing four main topics: i.e. 'hygiene and management of microbial contamination in fresh meat from game', 'zoonoses and epidemiology', 'risk assessment and quality assurance along the game meat chain' and 'quality issues in game meat products'. The focus on Europe is expanded by presenting specifics of the game meat chain in African and Asian regions, with a view to provide information on 'bushmeat' consumed by the indigenous population.     Description: A vast majority of marine geological research is based on academic seismic data collected with single-channel systems or short-offset multichannel seismic cables, which often lack reflection moveout for conventional velocity analysis. Consequently, our understanding of Earth processes often relies on seismic time sections, which hampers quantitative analysis in terms of depth, formation thicknesses, or dip angles of faults. In order to overcome these limitations, we present a robust diffraction extraction scheme that models and adaptively subtracts the reflected wavefield from the data. We use diffractions to estimate insightful wavefront attributes and perform wavefront tomography to obtain laterally resolved seismic velocity information in depth. Using diffraction focusing as a quality control tool, we perform an interpretation-driven refinement to derive a geologically plausible depth-velocity model. In a final step, we perform depth migration to arrive at a spatial reconstruction of the shallow crust. Further, we focus the diffracted wavefield to demonstrate how these diffraction images can be used as physics-guided attribute maps to support the identification of faults and unconformities. We demonstrate the potential of this processing scheme by its application to a seismic line from the Santorini Amorgos Tectonic Zone, located on the Hellenic Volcanic Arc, which is notorious for its catastrophic volcanic eruptions, earthquakes, and tsunamis. The resulting depth image allows a refined fault pattern delineation and, for the first time, a quantitative analysis of the basin stratigraphy. We conclude that diffraction-based data analysis has a high potential, especially when the acquisition geometry of seismic data does not allow conventional velocity analysis.

    Notes: We show that small in-plane magnetization components in magnetic garnet films with perpendicular anisotropy can be imaged using nonlinear magneto-optical proximal probe microscopy, i.e., magnetization-induced second harmonic generation together with a scanning near-field optical microscope. A relationship exists between the in-plane magnetization domains we observed and the typical maze-like out-of-plane magnetization domains that are simultaneously imaged recording the linear Faraday effect. © 2000 American Institute of Physics.

    Notes: The kinetics of the production and dark-decay of index gratings in chromium-doped bismuth germanium oxide Bi12GeO20 (BGO) and undoped BGO were investigated as a function of temperature from room temperature to about 500 K. During the write process in undoped BGO the gratings show a fast leading edge peak, which drops quickly to a steady saturated value. The leading-edge peak does not change significantly at the higher temperatures. Grating production was much slower in the BGO:Cr samples and the gratings grew monotonically throughout the 0.5 s write interval. At room temperature the gratings in BGO:Cr are highly persistent. A grating written at room temperature retains 70% of its initial strength after 24 h when it was read only once an hour. Optical erasure plays a major role in the decay of such gratings; reading the grating every 6 min reduced its strength to 48% of its initial value after 24 h. The grating written at room temperature and monitored as the sample was heated decayed within the same 10 K temperature range as the photochromic absorption bands. As expected, undoped BGO shows a rapid dark decay at room temperature that becomes faster at higher temperatures. © 2001 American Institute of Physics.

    Notes: Doping the photorefractive material bismuth germanium oxide Bi12GeO20(BGO) with chromium significantly affects its optical properties. An absorption spectrum taken at 300 K shows that the introduction of chromium produces a strong unresolved band which overlaps the absorption cutoff of BGO and a series of smaller overlapping bands between 650 and 1100 nm. Cooling BGO:Cr to 10 K sharpens the small bands and resolves the strong band into a peak near 510 nm. This peak is responsible for the reddish-brown color of BGO:Cr. Excitation at room temperature with visible light increases the bands in the 650–1100 nm range. The production of this additional room temperature photochromic absorption is most efficient with excitation near 490 nm but extends throughout the visible. Chromium occupies the tetrahedral germanium site in BGO; and the observed spectra are consistent with a Cr4+ tetrahedral state. During crystal growth some of the chromium gives up an electron to the antisite bismuth native defect and becomes Cr5+. Exposing the sample to light returns the electron to the chromium and increases the Cr4+ absorption. The photoinduced absorption is thermally stable for temperatures up to about 425 K. This stability suggests that doping BGO with Cr should lead to room temperature persistent photorefractive gratings. © 2001 American Institute of Physics.

    Notes: Ballistic-electron emission microscopy (BEEM) has been performed on Au/n-Si(111)7×7 and Au/CaF2/n-Si(111)7×7 in UHV. In both cases, the topography of the Au surface is characterized by ≈2.5 A(ring) height terraces, stacked in several stages, with rounded shapes for Au/Si, and hexagonal shapes for Au/CaF2/Si. BEEM up to tip voltages of 8 V on Au/Si is not altering the ballistic transmissivity, in contrast to previous work on Au/Si interfaces which involved chemical preparations of the Si surfaces. The shape of the BEEM spectra on Au/CaF2/Si depends on spectral features of the density of states of the CaF2 thin film.
