Summary In some yeast strains, which originally were unable to ferment sucrose, changing-over to sucrose fermenters has been observed. All strains in which changing had occurred belong to the offspring of a strain of Sacch. italicus var. melibiosi, which formerly has been crossed and analyzed in the Carlsberg laboratory. The distribution of changed strains among the offspring strongly points to monogenic behavior of the changing factor. The changing itself seems to be a mutation r→R of the gene responsible for fermentation of raffinose and sucrose; anyone of the M-genes seems not to be involved. In the “changed strains”, not all but only a few cells have been changed. So, with the replica-plate technique, we could separate unchanged and changed substrains from each other in a strain which originated from a single spore and therefore formerly consisted of genetically identical cells.
Notes:
