Zusammenfassung Die vergleichende Untersuchung der chemischen Zusammensetzung von Champignon-(Agaricus) und Austernseitling- (Pleurotus) Arten bzw. von ihren gezüchteten Sorten erfolgte hinsichtlich 23 mineralischer Elemente. Aufgrund des Vergleiches der erzielten Ergebnisse konnte festgestellt werden: DieAgaricus-Arten erwiesen sich mit Ausnahme des gezüchteten Champignons als bedeutende Arsenakkumulatoren, worüber das Schrifttum kaum etwas berichtet, während dies bei denPleurotus-Arten kaum vorkommt. Eine bedeutende Bioakkumulation zeigte die GattungAgaricus hinsichtlich des Cadmiums, mit Ausnahme der ArtenA. xanthoderma undA. bisporus. Eine beachtenswerte Kupferakkumulationsfähigkeit konnte beiAgaricus-Arten (25–260 mg/kg) gegenüber dem Mittelwert von 12,6 mg/kg beiPleurotus festgestellt werden. Die Champignons sind durch einen höheren Kalium- und Phosphorgehalt gekennzeichnet, was aus ernährungsphysiologischer Sicht vorteilhaft ist.

Summary Twenty-three mineral elements were investigated for their presence in someAgaricus andPleurotus species and their cultivated sorts. On the basis of the results, the following conclusions can be made. TheAgaricus species have remarkable accumulations of arsenic that are seldom reported in the literature (except forA. bisporus); this phenomenon could not be demonstrated in thePleurotus species. A remarkable accumulation of cadmium was found in theAgaricus species (except forA. bisporus andA. xanthoderma). A accumulation of copper was measured in theAgaricus fruit bodies (25–260 mg/kg), while the average copper level in thePleurotus species was 12.6 mg/kg. Only theAgaricus species can be characterized by an increased potassium and phosphorus content and this is advantageous from the point of view of nutritional-physiology.
