Both the cooking water and the partially-soluble barley fraction become elevated in 2H as a result of cooking. Data points are straight-line joined. The hydrogen isotopes of the insoluble barley fraction (not shown) are not progressively fractionated over the cooking duration (See S6 Table for data).
