Trypsin inhibitor activity of basidiomycetous mushrooms

and Hygrophorus species, Craterellus cornucopioides, Gomphidius glutinosus, Macrolepiota rhacodes and Hydnum repandum. The inhibiting activities found were higher than those of cereals but lower than those of some fabaceous plants.
