    Abstract: The chemical composition of flavourzyme hydrolysis product from Kappaphycus alvarezii by-products was analyzed. The results showed that the protein hydrolysate powder had high content of proteins (21.66%) and low content of lipids (0.22%). Hydrolyzed products contained about 15 free amino acids with relatively high content of some amino acids such as aspartic acid (1,879 mg/100 g), glutamic acid (1,813 mg/100 g), glycine (1,121 mg/100 g), tyrosine (1,203 mg/100 g) ) and serine (3,165 mg/100 g). In addition, main volatile flavor compounds such as acetophenone; nonanal; indole; 2.4-di-tert-butylphenol; heptadecane; 6.10.14- trimethylpentadecan-2-one have also been discovered. As a result, the by-products of K. alvarezii take a potential role in the food industry.

    Abstract: The Oceanographic Museum offers interesting exhibits of several marine lives for tourist sightseeing and entertainment. These sea water ornamental fish are all caught in the wild. However, its health can be affected by cyanide poisoning during human fishing. Depending on the level of cyanide poisoning, fish can die after one and two weeks that caused economic damages for the museum. The present study is concerned with results of cyanide detoxification by using direct injection into cinnamon clownfish or soak of hydroxocobalamin, sodium nitrite and sodium thiosulfate with the aim of improving the health, survival and life time for fish, contributing to increasing economic efficiency for the Oceanographic Museum.

    Abstract: In order to develop an ELISA KIT for detection of domoic acid (DA) in seafood in Vietnam, DA antibody was produced by immunizing in New Zealand white rabbit using DA-DSS (disuccinimidyl suberate)-BSA (Bovine Serum Albumin) as an antigen. The DA antibody in rabbit’s serum was purified for its use as a material of ELISA KIT. In antibody/antigen purification process, immunoaffinity chromatography (IAC) is considered as the best method by both its specification and ability to enrich antibody. However, DA is a hapten, and it is impossible to apply a regular immunizing principal for making an IAC column with DA as a solid phase to catch DA antibody. This paper presents a trial using polymer sepharose EAH 4B resin (omega-aminohexyl) IAC bound with hapten DA as a solid phase for DA antibody purification from rabbit’s serum. Using DSS as a chemical linker; then, based on the reaction between a carboxyl group of DA and a carbodiimide group of the resin EAH 4B, we were successful to make the IAC column with DA-DSS as the solid phase. Recovery ratio of the made IAC column reached 91.5 ± 1.5% (n = 3) to capture the antibody against DA standard. DA antibody from white rabbit’s serum was eluted successfully using this column with 0.5 M NaCl; 0.1 M PBS and then, 0.1 M Ldy-HCl solutions (pH 2.7). The obtained antibody was qualified by Western Blot using a specific reaction with the 2nd specific antibody HRP-labeled anti-goat IgG and the confirmed result revealed that it can be used as ELISA KIT material.

    Abstract: The antioxidant activities against DPPH free radical of crude extracts using ethyl acetate and methanol from ink sac, muscles, and bones of 5 squid species (Uroteuthis chinensis, Uroteuthis sibogae, Uroteuthis duvaucelii, Sepia esculenta, Sepioteuthis lessoniana) collected in Khanh Hoa waters were investigated. These activities ranged from 4.21% (ethyl acetate extract from ink of U. chinensis) to 54.51% (methanol extract from muscle of S. esculenta.). The functional group analysis by infrared adsorption spectrum (FTIR) in these crude extracts revealed the absorption peaks of melanin in ink, polysaccharide in bone and protein in muscle extracts. In addition, the SDS-PAGE result of some methanol extracts showed the presence of proteins with a molecular weight of 30-150 kDa.

    Abstract: This paper is concerned with certain properties of calcium hydroxyapatite from skipjack tuna bone (Katsuwonus pelamis) which are by-products of fish export industry. Hydroxyapatite Ca10(PO4)6(OH)2 and β-tricalcium phosphate Ca3(PO4)2, the high-value compounds, have been successfully extracted from skipjack tuna bones. The bones were heated at different temperatures of 600oC, 900oC, 1200oC. While at 600oC hydroxyapatites were obtained with Ca/P ratio of 1.658, comparable to the value of 1.67 found in human bone; the hydroxyapatite crystals of average size of 0.25 µm were formed with the same size distribution. In case of heated bone samples at 900°C and 1200°C, the calcium formed were biphasic calcium phosphate composed of hydroxyapatite and β-tricalcium phosphate; the Ca/P ratio was between 1.660–1.665; the calcium crystals of more than 1 µm were highly porous and connected to each other in priority orientation of tube direction.

    Abstract: This paper is concerned with composition and antibacterial activities of ethyl acetate extracts from 3 species of Laurencia (Rhodophyta): Laurencia papillosa, Laurencia flexilis and Laurencia cartilaginea collected from the southern coasts of Vietnam. The results showed that ethyl acetate (EtOAc) extracts of these species displayed antibacterial activities against Salmonella typhimurium, Escherichia coli and Bacillus subtilis. The qualitative investigations revealed the presence of two sesquiterpene secondary metabolites Elatol and Palisadin A in EtOAc extracts from the three above- mentioned Laurencia species.

    Abstract: Fish bone by-products are considered as abundant source of hydroxyapatite (HAp). The preparation of HAp from fish bones not only contributes to improving the value of by-products but also minimizes negative impacts on the environment. In this study, nanohydroxyapatite was successfully obtained from Lates calcarifer fish bone purchased from seafood export company in Khanh Hoa province. Fish bones were under alkali treatment and then heated at 600oC within different time intervals of 1, 2 and 4 hours. Analysis of XRD and SEM showed that the calcium formed was completely single-phase and possessed an average size of 50–64 nm depending on the calcination time. The results of the Ca/P molar ratio from 1.839 to 1.847 prove that the nano-HAp powders are B-type biological hydroxyapatites, which has been confirmed by FTIR spectrum. In addition, the content of heavy metals such as As, Pb, Hg, Cd is detected within safety limits. These properties allow nano-HAp powders to be applied in food and medicine fields.

    Abstract: The fan-bellied leatherjacket skin was treated to extract collagen by chemical method. The non-collagenous substances and the pigment in the skin were removed with NaOH and H2O2, respectively. Collagen was extracted with acetic acid. The treatment and extraction conditions were optimized by response surface methodology. The concentrations, skin/solution ratios (g/ml) and times were surveyed. The optimum conditions to remove the non-collagenous substances were as follows: the concentration of NaOH at 0.15M, the ratio (g/ml) at 1/13.9, time at 56.9 hours. Using H2O2 with the concentration at6%, the skin/solution ratio (g/ml) at 1/2, time at 10 minutes were suitable values for skin pigmentation removal. For collagen extraction, the concentration of acetic acid at 0.53M, skin/solution ratio at 1/9.6 g/ml and time in 59.6 hours were optimal.
