An HPLC method for determining HMF (5-hydroxymethylfurfural) in orange juice has been developed. The method for HMF involves extraction of the juice with ethyl acetate prior to reverse-phase HPLC. Fortification studies indicate an average recovery of 96.1%± 4.1% and a detection limit of 5.0 ppb.
