    Abstract: Spent coffee ground (SCG) is the main by-product of the instant coffee industry. In this study, wheat flour and dried SCG powder were used in the production of cookies with high fiber and antioxidant content. The objective of the study was to evaluate the effects of SCG ratio in the cookie formulation on nutritional quality, physical properties and sensory overall acceptability of the product. SCG is a rich source of dietary fiber. In 100 g dry weight of SCG, the total fiber and phenolic contents were 76.6 ± 0.58% and 3828±12 mg GAE/100g dry basis, respectively. When the SCG ratio increased from 0 to 0.25 of the composite flour weight, the dough had increased hardness and reduced adhesiveness, cohesiveness and springiness. An increase in the SCG ratio in the cookie formulation also decreased the diameter and thickness of the product but enhanced its hardness. Cookie samples supplemented with SCG had higher dietary fiber and phenolic content as well as a higher antioxidant activity than the control sample. Cookie samples were considered as high fiber food when the SCG ratio was 0.1 or higher. The use of SCG reduced the overall acceptability of cookies. When the ratio of SGC powder varied from 0.1 to 0.2, a sensory score of the obtained cookies was acceptable.

    Abstract: Study skills play an important role in academic achievement of students. This research was conducted to determine the study skills used by students and the relationship between study skills and academic achievement. This study is a descriptive correlational research design consisting of 579 students studying in different departments at Nong Lam University who were selected through convenient sampling. Data was collected by using the Inventory of College Level Study Skills which was developed by Dennis H Congos. The results showed that concentration skills had the highest mean (m=3.69), followed by test preparation skills (m=3.50), note-taking skills (m=3.33), memorizing skills (m=3.25), textbook reading skills (m=3.21), and the lowest one was time management skills (m=3.00). The findings also indicated that one-third of the participants had poor study skills; a half of them had medium study skills and only 14.7% of the participants had good study skills. This meant that the students did not acquire effective study skills. In measuring the relationship, the results revealed that there was a significant relationship between study skills and academic achievement (CGPA). There were significant positive weak correlations between concentration skills and CGPA (r=0.113), and between test preparation and CGPA (r=0.082). The findings proposed that students should be provided with suitable guidelines for effective study skills resulting in better academic achievements.

    Abstract: Nowadays, the problem of oil pollution is becoming a big challenge for the environment. Oil pollution threatens the survival of life on land as well as aquatic life. Aware of the seriousness of oil pollution, there have been many scientific studies on solutions to oil spill treatment. The methods can be mentioned as mechanical treatment, microbiological treatment, chemical treatment, absorbent material treatment. Each method has its advantages and disadvantages. In this short review, recent research activities related to the selection of oil-absorbing absorbents and their application in oil absorption are presented. Then, an extensive list of different oil-absorbing materials from the literature, including polymeric materials, porous inorganic materials, and biomass materials, was provided along with their characteristics. Furthermore, the oil adsorption capacity of such materials for different oils and organic solvents has also been discussed to highlight different factors involved in the selection of adsorbent adsorbents. Oil has been tested to separate oil in oil-water mixtures. Finally, some future trends and prospects for oil-absorbing materials are outlined.

    Abstract: Biscuits, which are loved by many consumers, often provide a high level of energy because they are rich in sugar, flour, fat and low in fiber. Fiber plays an important role in preventing constipation, cardiovascular diseases and obesity, so the current trend of manufacturers is to create high-fiber biscuit lines. Defatted copra meal (DCM) is a rich source of fiber and is added to biscuits to increase the fiber content of the cake. In this study, defatted copra meal, after being hydrolysed with the enzyme Cellulast1.5L (HDCM), will be used to replace wheat flour with different ratios, from 10% to 40%, in fiber rich biscuit recipe. The hydrolysis of DCM was carried out with an enzyme concentration of 5U/g dry matter, for 30 minutes. The obtained HDCM has a soluble fiber (SDF) content of 7.3% dry matter, an increase of 2.43 times compared to the DCM sample. At the same time, the ratio between insoluble fiber and soluble fiber (IDF/SDF) of HDCM also decreased by 2.64 times compared to this ratio of DCM. The chemical composition, hardness, physical and sensory parameters of biscuits were used to evaluate the effect of hydrolyzed copra meal replacement rate. When increasing the percentage of HDCM from 20-40%, the total fiber content of biscuits increased 1.7- 5.9 times compared with the control sample. The HDCM substitution rates of 20% and 30%, for biscuits with acceptable taste scores of 5.7 and 5.0, respectively, with total fiber content of 9.0 and 15.5%, respectively, are suitable for manufactures fiber-rich biscuits.

    Abstract: This study aims to investigate the impact of individual differences on English learning attitude and motivation of undergraduate students. The research tool used was in the form of a seft-reported questionnaire. The respondents were students from Nong Lam University, Ho Chi Minh City. The data collected from the questionnaire were analyzed using SPSS version 20. The results show that in terms of integrative and instrumental motivation, female is more self-motivated than male, and parents’ foreign language proficiency has substantial effect on the integrative and instrumental motivation. Students in rural areas have higher instrumental motivation than those in urban areas

    Abstract: In this study, the 30oBx wort with 30% maltose syrup adjunct was used for very high gravity brewing. Increase in pitching rate from 25×106 cells/mL to 125×106 cells/mL shortened the primary fermentation time and augmented the level of ethanol and diacetyl in the green beer. The suitable pitching rate was 75×106 cells/mL. Under this condition, the fermentation time reduced 44.2% and the ethanol concentration in the green beer increased 13.7% in comparison with those in the culture with conventional pitching rate; the ethanol yield achieved maximum of 44.1%. Combination of high pitching rate and nutritional supplementation to 30oBx wort reduced the fermentation time 8.7% and maintained the similar ethanol content in the green beer and the similar ethanol yield in comparison with the high pitching rate culture.

    Abstract: Learning strategies have a strong effect on students’ success in foreign language learning. In fact, they are considered tools for active and self-directed engagement, which is vital for developing communicative competence. Language learning strategies also enable students to take responsibility for their own learning progress. This study was carried out to identify the preferred language learning strategies which are most frequently employed by non-English major students at Nong Lam University, Ho Chi Minh City, Vietnam. The research was conducted with 725 undergraduate students with a descriptive quantitative method. The data was collected using a Vietnamese questionnaire adapted from Strategy Inventory for Language Learning (SILL) originally developed by Oxford (1990). The Statistical Package for Social Sciences (SPSS) version 22.0 software was used to analyze the data obtained from the questionnaire. The findings revealed that non-English majors used language learning strategies at a medium level of frequency. They didn’t equally use all 6 strategies in their learning, which probably impeded their progress of language learning. The most frequently used strategies by the learners were metacognitive strategies, followed by memory, affective, cognitive compensation and social strategies as the least preferred ones. Pedagogical recommendations for lecturers are also discussed in the paper.

Vạt trước đùi ngoài được sử dụng linh hoạt dưới nhiều hình thức khác nhau và với kích thước lớn là lựa chọn tối ưu trong che phủ khuyết hổng phần mềm vùng đầu mặt di chứng bỏng.Chúng tôi giới thiệu phương pháp tái tạo da đầu sử dụng vạt trước ngoài đùi trên 3 bệnh nhân với các khuyết hổng phần mềm vùng đầu phức tạp di chứng bỏng điện cao thế. Các vạt đều sống hoàn toàn, vết mổ liền kỳ đầu, đảm bảo chức năng che phủ tốt.
