    Abstract: Foodborne diseases encompass a wide spectrum of illnesses and are a growing public health problem worldwide. They are caused by consumption of food or water contaminated by pathogenic (disease-causing) microorganisms such as bacteria, viruses and parasites. The contamination of food can occur at any stage in the process from food production to consumption (“farm to fork”) and can result from environmental contamination (water, soil or air). They enter the body through the gastrointestinal tract where the first symptoms often occur like nausea, vomiting, stomach cramps, and diarrhoea. However, symptoms differ among the different types of foodborne diseases and the patient’s immune status. Symptoms can sometimes be severe and some foodborne illnesses can even be fatal. Commonly recognized foodborne infections are: campylobacteriosis, Escherichia coli O157:H7 infection and haemolytic uremic syndrome (HUS), salmonellosis, cryptosporidiosis, listeriosis, giardiasis. norovirus infection, scombroid fish poisoning, shigellosis, toxoplasmosis, Vibrio infection and yersiniosis. One of the top three germs that cause illnesses from food eaten in EU is Salmonella .

    Abstract: Aspergiloza je cesto gljivicno oboljenje razlicitih vrsta ptica i sisara, izazvana gljivicama roda Aspergillus. Oboljenje se karakterise inflamatornim promenama u respiratornom sistemu, a ponekad moze da se javi u generalizovanoj formi kada je zahvaceno vise organskih sistema. U ovom radu, ispitano je jato curica, starosti 21 dan, na jednoj farmi u Srbiji. Klinickim pregledom jata ustanovljeni su simptomi oboljenja centralnog nervnog sistema u formi ataksije, tortikolisa, pareze i paralize nogu i krila. Stopa mortaliteta u jatu je bila 7,2 %. Kod 10 od 12 obdukovanih curica na plucima su ustanovljeni multipli zuto-beli granulomi, od jedan do tri milimetara u precniku. Kod 9 od 12 obdukovanih curica na sagitalnom preseku malog ili velikog mozga nadjeni su pojedinacni zuto-beli granulomi, velicine od tri do pet milimetara u precniku. Mikoloskim ispitivanjem izolovana je gljivica Aspergillus fumigatus. Za procenu histopatoloskih promena u plucima i mozgu kao i dokaz hifa gljivica, koriscene su tri histohemijske metode: hematoksilin-eozin (HE), Grocott methenamine silver (GMS) i PAS metoda. Mikroskopskim pregledom uzoraka pluca i mozga bojenih HE metodom, ustanovljeno je prisustvo granuloma sa centralnim podrucjem kazeozne nekroze koje je bilo okruzeno sa gigantskim celijama, makrofagima, heterofilima, limfocitima i spoljasnjom kapsulom sacinjenom od vezivnog tkiva. Hife gljivica, kao sastavni delovi granuloma, bile su tesko uocljive, a u nekim uzorcima bojenim HE metodom nisu se ni videle. Nasuprot ovome, u preparatima bojenim Grocott i PAS metodom jasno su se isticale septirane i razgranate hife u centralnim delovima granuloma. U dijagnostici ovog gljivicnog oboljenja neophodno je primeniti vise histohemijskih metoda kako za procenu histopatoloskih promena tako i za dokaz uzrocnika, ukljucujuci i izolaciju u cilju postavljanja etioloske dijagnoze.     Abstract: Listeria monocytogenes is a food-borne pathogen responsible for listeriosis, a sickness with a high mortality rate. Listeriosis is largely associated with ready-to-eat (RTE) foods. It is well established that foods that pose the greatest risk of foodborne listeriosis are those RTE foods that have intrinsic characteristics such as pH and water activity that support the growth of L. monocytogenes. RTE foods can also become re-contaminated during further processing and handling. Increased handling leads to a higher probability of contamination. Sources of contamination can be food contact surfaces, processing machinery and workers. In our research, L. monocytogenes was detected in a RTE salad. Food safety criteria for Listeria monocytogenes in RTE foods have been applied from 2006 (Commission Regulation (EC) 2073/2005). Still, human invasive listeriosis was reported to increase during 2009-2013 in the European Union and European Economic Area. Time series analysis for the 2008-2015 period in this area showed an increasing trend of the monthly notified incidence rate of confirmed human invasive listeriosis of the over 75 age groups and female age group between 25 and 44 years old (probably related to pregnancies).

    Abstract: Yogurt is one of the most popular fermented dairy products with a worldwide acceptance. There are many types of yogurt differing in flavor, physical and chemical properties. Yogurt is produced by adding bacterial culture of Lactobacillus delbrueckii subsp. bulgaricus and Streptococcus thermophilus to milk and cream products. During the period from January 2017 to December 2020, a total of 202 yogurts from different small and medium sized dairy plants were analyzed as part of HACCP self-control programs. The determination of Enterobacteriaceae was performed as an alternative indicator of good hygiene practice. The results showed that 21.29% of analyzed yogurts contained more than 10 CFU/g Enterobacteriaceae , which is the evidence of poor hygiene or inadequate processing, process failure and post-process contamination. Generally, dairy products are potential vehicles for microorganisms from the Enterobacteriaceae family. Good manufacturing practices and good hygiene practices must be followed throughout the production line thoroughly. The absence of classic foodborne pathogens does not indicate that the yogurt is fit for consumption, since other potentially pathogenic bacteria of the Enterobacteriaceae family could be present. Thus, rather than pathogen testing, using Enterobacteriaceae to monitor the effectiveness of implemented preventive prerequisite measures could offer a better view of the quality, sanitary conditions, and safety of yogurt products.

    Abstract: Feed has become liable to testing for the presence of ruminant DNA as part of the eradication process of transmissible spongiform encephalopathies. For safety reasons, by the so-called total feed ban, meat and bone meal has been excluded from the diet of food chain animals for years. However, changes in EU regulations that led to relaxation of this ban began from mid-2013 with the introduction of animal proteins derived from poultry and pigs in feed for aquaculture. The EU published an approved PCR method for determining the species of animals from which the ingredients originate. The EU also validated a real-time PCR protocol for detection of prohibited ruminant DNA. As a result of harmonization with the EU legislation, in 2016, amendments to the Serbian TSE regulations were published and an identical method of feed control prescribed. In the same year, this procedure was implemented by the Institute of Veterinary Medicine of Serbia and accredited to the required standard, so adequate feed control started. The aim of this paper is to present the results of the first 50 animal feeds or feed materials tested for the presence of ruminant DNA using the official realtime PCR method. A high percentage (54 %) of the 50 feeds/feed materials studied contained ruminant DNA.

    Abstract: The aims of this study were to determine the nutritional composition (moisture, protein and total fat) of peglana sausages produced in eastern Serbia and to analyze the composition of fatty acids. Determination of fatty acid composition in the sausages was performed after ripening and after 20 days of storage. Also, a sample preparation method for fatty acid analysis after simultaneous microwave-assisted extraction-esterification was implemented and results were compared with conventional extraction. The results obtained show peglana sausages have high contents of proteins and saturated fatty acids, but no nitrite; the lack of nitrite makes these sausages a suitable product for consumers trying to avoid this additive. The good agreement between results provided by both fat extraction methods demonstrates the usefulness of both methods as routine methods for the treatment of meat samples prior to fatty acid analysis.

    Abstract: As fish has been known for its high protein content and other health benefits, aquaculture production has started to flourish in Serbia. Common carp is the predominant species being farmed, comprising more than 80% of the total fish production in Serbia. The primary ingredients in fish feed are plant-based products, which present a risk of mycotoxin contamination, posing a potential risk to consumers. Therefore, this study aimed to determine the mycotoxin status of carp aquaculture in Serbia. At the beginning of the feeding season, May to June 2019, 27 samples of feed ingredients, 8 of finished feed and 14 of edible fish meat were analysed. The fish feed and feed ingredients were sampled from local producers, while the fish were sampled from fish farms that were reported to use the sampled feed. The feed ingredients were locally produced maize and maize products, sunflower meal, soybean and soybean products, wheat, bone meal, yeast and distillers dried grains with solubles, which were ground together, mixed and pelleted in different sizes. All samples were tested for the presence of aflatoxins (aflatoxin B 1 (AFB 1 ), B 2 , G 1 and G 2 ), ochratoxin A (OTA), zearalenone, deoxynivalenol, fumonisins (fumonisin B 1 and B 2 ), HT-2 and T-2 toxins. The most prevalent mycotoxins were OTA (91.4%), fumonisin B 1 +B 2 (68.6%) and AFB 1 (48.6%). Only one sample of the plant-based ingredients was below limit of quantification (LOQ), and more than 85% of the samples had more than one mycotoxin detected, ranging from 0.43 μg/kg of AFB 1 to 3,168.5 μg/kg of fumonisin B 1 +B 2 . However, all the samples of edible fish meat were under the LOQ. We suggest that further research should be conducted on the effects of co-occurring mycotoxins; we also recommend stricter regulations on fish feed to reduce the impacts of mycotoxins on fish health and productivity.
