    Abstract: This study seeks to discuss the significance of school nutrition expressed by students in public schools from the state of Bahia, Brazil. The objective is to understand the symbolic aspects associated with school nutrition. The results of a survey into the significance of nutrition offered by the Brazilian School Nutrition Program (PNAE) expressed by students from six public schools in municipalities in the state of Bahia, Brazil, are presented. A qualitative approach to understand nutrition at school and notions about healthy food by analyzing oral and written narratives of adolescents is used. The reports point to opposing stances between food in the home and food outside the home. What is customary can appear strange depending on the time and place. In this sense, they do not make an association between healthy food and PNAE. The food culture requires students to eat food on two occasions: breakfast and lunch (or dinner). These are aspects that are distinct, however they must be combined in school, because for these social actors, studying and eating are necessities that complement each other.

    Abstract: Este estudo contempla as experiências de deficiência de sujeitos surdos, considerando a inserção no trabalho. Orientada pelas teorias compreensivas, esta pesquisa valoriza as dimensões social e cultural do tema e as subjetividades emergentes dos encontros sociais. O propósito deste artigo foi refletir sobre a inclusão do servidor público com surdez, enquanto sujeito social e político, considerando a percepção da experiência desse trabalhador em instituições que adotam práticas inclusivas nos seus processos seletivos. Trata-se de uma pesquisa de natureza qualitativa, de caráter exploratório, orientada nas ciências sociais e humanas, desenvolvida a partir da análise de narrativas em um contexto institucional. Utilizou-se a modalidade de entrevista narrativa, mediada por entrevistador fluente em língua brasileira de sinais (Libras). A análise encontrou duas categorias autodeterminadas, referentes à identidade do sujeito: (1) “surdo” e (2) “deficiente auditivo”. Afirmação identitária e estigmatização são dimensões em destaque a partir da identificação de elementos facilitadores e dificultadores do processo inclusivo do surdo no trabalho. Esses elementos se revelaram multifatoriais, intrínsecos e extrínsecos aos sujeitos, com ênfase nas barreiras comunicativas. Com base na teoria social do reconhecimento, a valorização da identidade de surdo, autoestima e participação social ganham relevo na agenda política desse grupo, com possibilidade de reconfigurar a noção de deficiência, afastando-a do lugar de opressão.

    Abstract: OBJECTIVE: This study analyzed the profile of dieticians who work for the National School Food Program and participated in training courses offered by the Schoolchildren's Food and Nutrition Collaborator Center of the Northeastern states in 2007. METHODS: This descriptive, exploratory study used nonprobability sampling to recruit 434 dieticians. Education, work experience, work, activities performed at National School Food Program and sociodemographic variables were analyzed. Pearson's chi square test was used to investigate possible associations between time working for National School Food Program and performed activities. RESULTS: Most participants were females (97.2%) aged 20 to 30 years (42.7%) and graduated more than ten years ago (40.2%). Most were also working only part time in the program (53.3%). The income of most dieticians ranged from 2-5 minimum salaries (64.1%). Most dieticians who frequently performed the analyzed activities had been in National School Food Program for 2-5 years (p 〈 0.05). CONCLUSION: National School Food Program dieticians take on responsibilities that overlap with other areas of knowledge, especially education and administration. In parallel, despite the professional satisfaction, the participants were not very satisfied with their work conditions.

    Abstract: OBJECTIVE: This study assessed a training program for dieticians, actors of the Brazilian School Food Program, in Northeast Brazil. This program was developed by a partnership between the Schoolchildren's Food and Nutrition Collaborator Center from the Federal University of Bahia and National Education Development Fund, from 2007 and 2008. METHODS: The focus group method was administered to dieticians who participated in the training program. Four focus groups were done and the data were organized into two categories: one about learning during the training program and one about the ability to make changes. RESULTS: Most participants were females aged 20 to 35 years. Their participation in the training program had been at least three months before the study. Assessment of the training program showed that the program improved their technical and scientific knowledge about themes related to professional practice and about the ethical and political dimension of their work. The program encouraged mobilization for possibly strengthening the category, incentivized partnerships among different agents and sectors and promoted the planning of new law-enforcement actions. CONCLUSION: The dialogical perspective was striking for the participants, enabling them to confront their realities and collectively reflect on the dietician's role in the field of school food.

    Abstract: The present article is a brief reflection on the field of Food and Nutrition as it interconnects with the humanities. Relevant theorists' thinking as well as the experience of the authors were used as references. The main purpose is to stimulate the discussion on the food-and-nutrition issue, taking into account the complexities involved in the relations between food consumption and dietetics. Also it is expected to motivate nutritionists to reflect upon their professional practice. Incorporating the use of hermeneutics for the comprehension of the subject is justified in terms of its methodological significance. The importance of taking action in guiding food consumption through the association of the technical knowledge of the field with various perspectives of comprehensive theories is also discussed.

    Abstract: OBJECTIVE: To evaluate the association between electrical bioimpedance analysis (BIA) and visceral fat (VF) in adult and elderly patients. SUBJECTS AND METHODS: This was a cross-sectional study, with a sample of 191 subjects (52% women, 49% elderly) stratified by sex, age and body mass. Computerized tomography (VF area) and BIA (percentage of total body fat (%TBF-BIA), phase angle, reactance and resistance) data were generated. Statistical analysis was based on Pearson's Correlation Coefficient, Anova, Pearson's Chi-square, and ROC curves. RESULTS: VF areas 〉 130 cm² were more prevalent among the elderly and among men. Adult females showed a stronger correlation between GV and %TBF-BIA. The other groups showed similar results and statistically significant correlations. Correlations between GV and phase angle were weak and not statistically significant. ROC Curves analyzes showed the following %TBF-BIA, which identified excess VF: for male subjects: 21.5% (adults) and 24.25% (elderly); for female subjects: 35.05% (adults) and 38.45% (elderly) with sensitivity of 78.6%, 82.1%, 83.3%, and 66.7%, and specificity of 70.6%, 62.5%, 79.1%, and 69%, respectively. CONCLUSION: BIA was found to have satisfactory sensitivity and specificity to predict VF; however, other devices and other techniques should be investigated to improve VF prediction.

    Abstract: Este trabalho trata de uma análise narrativa sobre o comer em uma comunidade carente, território remanescente quilombola e as relações compreensivo-hermenêuticas que se estabeleceram naquele espaço simultaneamente ao advento da pandemia por Covid-19. Foram analisadas narrativas de um membro do Quilombo do Orobu, localizado na cidade de Salvador, Bahia, Brasil, obtidas de modo virtual. Utilizou-se a metodologia interpretativa com contribuições dos escritos de Gadamer, que remeteu aos significados histórico-sociais para interpretação do comer, da fome, do mundo do trabalho, do pertencimento e do distanciamento físico como medida de prevenção ao novo coronavírus em uma comunidade culturalmente aglomerada. A principal contribuição da interpretação dessa experiência narrativa surge da percepção de moradores da comunidade quanto a ausência de escuta ativa por parte do poder público, pertencimento alimentar ancestral e a compreensão aparentemente antagônica de isolamento sociointerativo dos moradores para enfrentar o Covid-19. Para um momento pós-pandêmico, veio à tona a interpretação da necessidade de discussões sobre a renda mínima infantil relacionada à alimentação escolar para crianças de baixa renda como medida de proteção à Segurança Alimentar e Nutricional na comunidade.
