Xanthan overproduction only takes place if a sugar which may serve as precursor is present and transition to limited growth occured. This transient phase is characterized by a change in composition of macromolecular cell components (RNA, protein, carbohydrates). During the transient phase nearly no nitrogen is consumed, whereas glucose and oxygen consumption proceeds nearly undisturbed. The changes observed in the transient phase are discussed in context with physiological adaption.
