    Kurzfassung: This study investigated the effect of combining tumbling and sous-vide cooking processes on the tenderness, cooking losses and colour of bovine Semitendinosus (ST) muscles sampled from Charolais-breed cows. Half of the ST muscles were tumbled for 12 h with a compression rate of 40%. All muscle samples, whether tumbled or not, were then sous-vide cooked at 50 °C, 60 °C or 80 °C for 1 h or 4 h. After cooking, we measured the shear forces (SF), cooking losses, total water content and the main colour characteristics of pre-tumbled and non-tumbled meat pieces. Pre-tumbled meat pieces had 20% lower SF values than non-tumbled meat pieces, regardless of the cooking conditions applied. All meat pieces cooked at 50 °C had significantly higher (p 〈 0.05) SF values and lower (p 〈 0.05) cooking losses than meat pieces cooked at 60 °C or 80 °C. Pre-tumbled meat pieces showed significantly lower cooking losses (p 〈 0.001) than non-tumbled meat pieces. Applying the tumbling process before cooking led to an increase in meat colour lightness values (p 〈 0.001), and the colour parameters were significantly affected (p 〈 0.05) by temperature, cooking time, and temperature × cooking time interaction. Combining a 12-h tumbling process with cooking at 60 °C appears to provide the best compromise between increasing meat tenderness and limiting cooking losses.

    Kurzfassung: An innovative “domino” process, based on an arene hydrogenation followed by a photocatalytic step, was designed for the remediation of endocrine disrupting compounds, in highly concentrated aqueous effluents. The novelty relies on the use of TiO2-supported zerovalent Rh nanoparticles as multicatalytic materials (MCMs) for this two-step treatment, applied on diethyl phthalate, which is a model aromatic pollutant frequently present in aquatic environments. This nanocomposite advanced material, which was easily prepared by a green, wet impregnation methodology, proved to be active in the successive reactions, the reduction in the aromatic ring, and the photodegradation step. This sustainable approach offers promising alternatives in the case of photoresistive compounds.

    Kurzfassung: Nonlinear (NL) and multilinear (ML) systems play a fundamental role in engineering and science. Over the last two decades, active research has been carried out on exploiting the intrinsically multilinear structure of input–output signals and/or models in order to develop more efficient identification algorithms. This has been achieved using the notion of tensors, which are the central objects in multilinear algebra, giving rise to tensor-based approaches. The aim of this paper is to review such approaches for modeling and identifying NL and ML systems using input–output data, with a reminder of the tensor operations and decompositions needed to render the presentation as self-contained as possible. In the case of NL systems, two families of models are considered: the Volterra models and block-oriented ones. Volterra models, frequently used in numerous fields of application, have the drawback to be characterized by a huge number of coefficients contained in the so-called Volterra kernels, making their identification difficult. In order to reduce this parametric complexity, we show how Volterra systems can be represented by expanding high-order kernels using the parallel factor (PARAFAC) decomposition or generalized orthogonal basis (GOB) functions, which leads to the so-called Volterra–PARAFAC, and Volterra–GOB models, respectively. The extended Kalman filter (EKF) is presented to estimate the parameters of a Volterra–PARAFAC model. Another approach to reduce the parametric complexity consists in using block-oriented models such as those of Wiener, Hammerstein and Wiener–Hammerstein. With the purpose of estimating the parameters of such models, we show how the Volterra kernels associated with these models can be written under the form of structured tensor decompositions. In the last part of the paper, the notion of tensor systems is introduced using the Einstein product of tensors. Discrete-time memoryless tensor-input tensor-output (TITO) systems are defined by means of a relation between an Nth-order tensor of input signals and a Pth-order tensor of output signals via a (P+N)th-order transfer tensor. Such systems generalize the standard memoryless multi-input multi-output (MIMO) system to the case where input and output data define tensors of order higher than two. The case of a TISO system is then considered assuming the system transfer is a rank-one Nth-order tensor viewed as a global multilinear impulse response (IR) whose parameters are estimated using the weighted least-squares (WLS) method. A closed-form solution is proposed for estimating each individual IR associated with each mode-n subsystem.

    Kurzfassung: Tenderness is a major factor in consumer perception and acceptability of beef meat. Here we used a laboratory tumbling simulator to investigate the effectiveness of the tumbling process in reducing the toughness of raw beef cuts. Twelve Semitendinosus beef muscles from cows were tumbled according to four programs: T1 (2500 consecutive compression cycles (CC), for about 3 h), T2 (6000 CC, about 7.5 h), T3 (9500 CC, about 12 h), and T4 (13,000 CC, about 16 h). The effect of tumbling on the toughness of raw meat was assessed using compression tests (stresses measured at 20% and 80% of deformation ratios) and microscopic observations made at the periphery and centre of meat samples, and compared against non-tumbled controls. Longer tumbling times significantly reduced the stresses measured at 20% and 80% compression rates, which reflected the toughness of muscle fibres and connective tissue, respectively. At the microscopic level, longer tumbling times led to reduced extracellular spaces, increased degradation of muscle structure, and the emergence of amorphous zones. A 12-h tumbling protocol ultimately makes the best compromise between the process time demand and toughness reduction in beef Semitendinosus meat pieces.

    Kurzfassung: The expansion of adipose progenitor cells (APCs) plays an important role in the regeneration of the adipose tissue in physiological and pathological situations. The major role of CD26-expressing APCs in the generation of adipocytes has recently been highlighted, revealing that the CD26 APC subtype displays features of multipotent stem cells, giving rise to CD54- and CD142-expressing preadipocytes. However, a relevant human in vitro model to explore the regulation of the APC subpopulation expansion in lean and obese adipose tissue microenvironments is still lacking. In this work, we describe a novel adipose tissue model, named ExAdEx, that can be obtained from cosmetic surgery wastes. ExAdEx products are adipose tissue units maintaining the characteristics and organization of adipose tissue as it presents in vivo. The model was viable and metabolically active for up to two months and could adopt a pathological-like phenotype. The results revealed that inflammatory and fibrotic microenvironments differentially regulated the expansion of the CD26 APC subpopulation and its CD54 and CD142 APC progenies. The approach used significantly improves the method of generating adipose tissue models, and ExAdEx constitutes a relevant model that could be used to identify pathways promoting the expansion of APCs in physiological and pathological microenvironments.
