    Abstract: Introduction: Alginate is a biopolymer commonly in brown algae, high content, diversity in structure and bioactivity. They are applied to other fields such as food, functional food, pharmaceuticals, and heavy industry and extracted from Sargassum, Laminarin, Tubinaria and Sargassum polycystum species commonly grow in the world than another genus. The content, the antioxidant activity, and the physical chemistry properties of alginate extracting from the species did not exhibit in the previous studies. Methods: The study focused on the impact of various extraction conditions (temperature (40 to 90,oC), time (01 to 06, hours), the solvent-to-material ratio (10/1 to 40/1, v/w), solvent pH (8, 9, 10), and numbers of extraction (1, 2, and 3 times) on alginate content and its antioxidant activity, also evaluated sugar compositions, average molecular, viscosity, and 13C-NMR spectrum characteristics of alginate. Results: The results showed that the suitable condition for the extraction of alginate was for 4 hours at 60oC with the ratio of Na2CO3 (pH 9)-to-material (40/1, v/w) and one number of extraction. The highest alginate content was 176.22 mg uronic acid equivalent/g DW, corresponding to antioxidant activity (188.54 mg ascorbic acid equivalent/g DW). Alginate possessed the intrinsic viscosity (271.86, ƞ) and the average molecular weight (78.6, kD). Different sugar compositions of antioxidant alginate were fructose, fucose, mannose, galactose, rhamnose, mannose, and glucose. The 13C-NMR spectrum of antioxidant alginate exhibited chemical shifts of C sites of D-mannuronic (M) and L-guluronic (G), corresponded to C1, C2, C6, and C2, C3, C4, C5, C6, respectively. Conclusion: Alginate is non-toxic, therefore, antioxidant alginate extracting from brown algae Sargassum polycystum grown in Vietnam is a potential in functional food and pharmaceuticals.

    Abstract: The fan-bellied leatherjacket skin was treated to extract collagen by chemical method. The non-collagenous substances and the pigment in the skin were removed with NaOH and H2O2, respectively. Collagen was extracted with acetic acid. The treatment and extraction conditions were optimized by response surface methodology. The concentrations, skin/solution ratios (g/ml) and times were surveyed. The optimum conditions to remove the non-collagenous substances were as follows: the concentration of NaOH at 0.15M, the ratio (g/ml) at 1/13.9, time at 56.9 hours. Using H2O2 with the concentration at6%, the skin/solution ratio (g/ml) at 1/2, time at 10 minutes were suitable values for skin pigmentation removal. For collagen extraction, the concentration of acetic acid at 0.53M, skin/solution ratio at 1/9.6 g/ml and time in 59.6 hours were optimal.

    Abstract: Introduction: Inulins are a group of natural active polysaccharides found in ginseng and dangshen and mainly used in pharmaceutical preparations and functional food. The purification condition of inulin from dangshen grown in Vietnam did not occur in previous studies. Hence, the study presented on the content, purification degree, molecular weight, and functional group characteristics of inulin extracted from natural dangshen roots (Codonopsis javanica) in other purification conditions. Methods: Some factors survey impact purification conditions of inulin, for example, the kinds and the concentration of the solvent, the temperature and the times of the precipitation, and the active coal impact. The objects such as the content of inulin, fructan, and crude polysaccharide, purification degree of inulin, and fructan were analyzed. Molecular weight and functional group characteristics of purification inulin extracted from dangshen roots (Codonopsis javanica) grown in highland Lam Vien, Vietnam, were also analyzed. Results: The purification degree of inulin purified by using ethanol was higher than that using active coal, corresponding to 97.85a ± 0.84 % and 94.05 %, respectively. Inulin content was the large ratio in crude polysaccharide, exhibited via FTIR and the analysis results. Inulin and fructan were the most precipitated in ethanol, for example, 80 % and 90 % ethanol, respectively, compared to another solvent. The kinds and the concentration of the solvent, the temperature and the precipitation times, and active coal impacted the content and the purification degree of inulin and fructan (p 〈 0.05). The precipitation of inulin and fructan in ethanol solvent was affected by the temperature. The molecular weight of inulin and fructan corresponded to 3,193 Da and 1,112,892 Da, respectively. Conclusion: Inulin of natural dangshen roots in Lam Vien highland, Vietnam was useful for functional foods and pharmaceutics.

    Abstract: Edible films and coatings have currently received increasing interest because of their potential in food applications. This study examined the effect of incorporated essential oils and natural plant extracts on the characteristics of the composite seaweed hydrocolloid and gac pulp films. Films were prepared by a casting technique, followed by measurement of physical, optical, barrier, mechanical, and structural properties. The results showed that adding plant oils and extracts significantly affected the physical, optical, mechanical, and structural properties of the composite films. Incorporation of the essential oils resulted in a reduction in moisture content and opacity while increasing values for Hue angle and elongation at break of the composite films. Besides, incorporation of the plant extracts showed increases in thickness, opacity, ΔE, Chroma, and elongation at the break, while there is a decrease in the Hue angle values of the composite films. In conclusion, incorporating plant essential oils and extracts into composite seaweed hydrocolloid and gac pulp films can enhance film properties, which can potentially be applied in food products.

    Abstract: Đặt vấn đề: Beta-thalassemia là nhóm bệnh thiếu máu di truyền gen lặn theo quy luật Mendel do đột biến gen globin làm giảm hoặc mất tổng hợp các chuỗi β-globin từ đó gây ra tình trạng thiếu máu tán huyết. Mục tiêu nghiên cứu: Mô tả đặc điểm lâm sàng beta-thalassemia thể nhẹ, thể trung gian và thể nặng. Đối tượng và phương pháp nghiên cứu: Nghiên cứu mô tả cắt ngang trên 44 bệnh nhân mắc beta-thalassemia đến khám và điều trị tại Bệnh viện Huyết học-Truyền máu Cần Thơ và Bệnh viện Trường Đại học Y Dược Cần Thơ từ tháng 06/2021-12/2022. Kết quả: Độ tuổi trung bình biểu hiện triệu chứng đầu tiên là 16,7± 9,787 (tháng tuổi) ở thể nặng, 13,91± 19,835 (tuổi) ở thể trung gian và 17± 3,13 (tuổi) ở thể nhẹ. Về các triệu chứng cơ năng, bệnh nhân beta-thalassemia thể nhẹ có 72,7% bệnh nhân có hoa mắt-chóng mặt, 45,5% có mệt mỏi; thể trung gian có 95,7% bệnh nhân biểu hiện mệt mỏi, chóng mặt chiếm 78,3%, ăn/uống kém chiếm 73,9%; 100% bệnh nhân có mệt mỏi ở thể nặng, 80% biểu hiện chóng mặt, ăn/bú kém chiếm 70%. Về các triệu chứng thực thể, 100% bệnh nhân thể nặng có triệu chứng thiếu máu (da xanh, niêm nhợt), sạm da 50%, khuôn mặt thalassemia 50%, gan to chiếm 80%, lách to 50%, đã cắt lách 50%; thể trung gian có triệu chứng tương đồng với thể nặng nhưng mức độ nhẹ hơn, niêm nhợt chiếm 91,3%, da xanh 78,3%, sạm da 56,5%, khuôn mặt thalassemia 30,4%, gan to 52,2%, lách to 39,1%, đã cắt lách 21,7%; thể nhẹ có da xanh, niêm nhợt chiếm 9,1%. Kết luận: Các đặc điểm lâm sàng có mối liên hệ với các thể bệnh beta-thalassemia, thể bệnh càng nặng biểu hiện triệu chứng lâm sàng càng rõ rệt, càng nặng nề hơn.
