Summary The title compound is detected quantitatively in mixtures with aromatic amino acids by a new isocratic HPLC method which employs a chemically modified RP-8 column, a 1.5 mol/L NaOAc buffer with addition of 2.6% cyanomethane and 1.3% tetrahydrofuran, and an ultraviolet detector. The detection limit is 55 gg/kg, linearity between concentration and integrated detector output is obtained within a range of about three orders of magnitude (55 μg/kg to 20 mg/kg). The title compound is identified in a hydrolyzed browning product which was formed through reaction of a /l-casein fraction andd-glucose; the proportion of protein-bound lysine side chains which reacted to the pyrrolaldehyde is calculated to be approximately 0.1 %.

Zusammenfassung Die Titelverbindung wird in Gemischen mit aromatischen Aminosäuren mittels eines neuen, isokratischen HPLC-Verfahrens bestimmt, wobei eine chemisch modifizierte RP-8-Säule, 1,5 mol/L NaOAc-Puffer unter Zusatz von 2,6% Cyanomethan und 1,3% Tetrahydrofuran sowie ein UV-Detektor eingesetzt werden. Die Erfassungsgrenze liegt bei 55 μg/kg, Linearitat zwischen Konzentration und integriertem Detektorsignal ist über ca. drei Größenordnungen gegeben (55 μg/kg bis 20 mg/kg). Die Titelverbindung wird in einem hydrolysierten Bräunungsprodukt identifiziert, welches aus einer β-Casein-Fraktion undd-Glucose gebildet wurde, dabei reagieren etwa 0,1 % der proteingebundenen Lysinseitenketten zum Pyrrolaldehyd.
