    Abstract: The aim of this study was to investigate the effect of hempseed cake on production traits, metabolic profile and antioxidant status of lambs. The research was conducted on 20 Merinolandschaf lambs of similar live body weight (24.03 kg ± 2.22 and 24.06 ± 1.84 kg in control and experimental group, respectively). The experiment started after the weaning of lambs at their average age of 70 days. Lambs were divided by gender (50% male: 50% female) and then allocated in two groups. The research lasted for 30 days during the fattening period. Lambs in the control group were fed with feed mixtures, where main protein source was soybean meal and extruded soybean (SB), while lambs in the experimental group were fed feed mixtures in which soybean was replaced by hempseed cake (HSC) at 12% of dry matter. Higher values of daily weight gain (P 〈 0.05) compared to SB lambs were observed from days 15 to 30. HSC lambs showed no significant differences in hematology and biochemical blood parameters, except for lower (P 〈 0.001) urea concentrations on days 15 and 30, as well as higher (P 〈 0.05) Mg concentrations in serum on day 30. Hempseed cake in lambs’ diets did not influence (P 〉 0.05) activity of the enzymes like AST, ALT, ALP, GGT and CK, as well as SOD and GPx enzymes, thus not affecting the antioxidant status of lambs’ blood. Concentrations of DHA and n-3 fatty acids were higher (P 〈 0.05) in HSC group than in SB group. The present study confirmed that the inclusion of HSC as soybean replacement up to 12% in the lambs’ diet is justified when considering production traits, metabolic profile and antioxidant status of Merinolandschaf lambs.

    Abstract: This study aimed to research the effect of the seedless grape pomace (GP) added to feed mixture on meat quality, metabolic profile, and antioxidant status of Merinolandschaf lambs. The 90-day-old lambs in the control group (C, n=10) were fed feed mixture without GP while in experimental groups they were fed with 10% (GP10, n=10) or 20% (GP20, n=10) of GP in feed mixture for 30 days. There was a significant increase in L*, a* values and hue angle as well as a decrease in b* values of lamb carcasses in GP10 and GP20 compared to C group. When lambs were fed GP glucose concentrations decreased, while non-esterified fatty acids (NEFA) and β-hydroxybutyrate (BHB) increased on the 30th day in GP10 and GP20 compared with C group. A significant increase in SOD activity on day 30 and GPx activity on day 15 in lambs’ blood of GP10 and GP20 compared with C group was determined. Also, an increase in DPPH in lamb GP10 and GP20 compared with C was determined. The obtained results of the meat quality, metabolic profile and antioxidant status parameters of lamb meat showed that the use of 10% GP in the diet is justified, while 20% of GP was questionable.

    Abstract: The research aimed to determine the blood metabolic profile and acid-base status of lactating Travnik ewes in an extensive production system. The research was carried out on 108 lactating Travnik ewes, with an average age of 3-4 years, in their 3rd lactation. The ewes were kept on pasture, and had water and animal salt ad libitum. Hematological indicators were determined in whole blood, biochemical parameters in serum, and acid-base status was determined in plasma. The determined average values of hematological parameters were mostly within reference values, except the lower MCHC content and higher MCV content, which indicates the instability of erythrocyte constants. Average mineral concentrations were within the reference values, except for Ca and Fe concentrations which were lower and were influenced by higher milk excretion. Most of the biochemical indicators, enzyme activity, and indicators of the acid-base balance of lactating Travnik ewes’ blood were within the reference values. A high concentration of urea above the reference values was found, and concentrations of total proteins, albumins, total cholesterol, HDL and LDL cholesterol, and triglycerides at the upper limit or above the reference values were determined. Slightly lower GPx activity and higher SOD activity above reference values were determined. These indicators point to energy deficit, as well as poor grazing quality, and a lack of selenium in pasture plant species. When determining the blood metabolic profile of lactating Travnik ewes, the obtained results of the research should be considered, and they should be included in the development of reference values for the Travnik sheep breed.

    Abstract: The aim of this research was to investigate the slaughter indicators, carcass measures, and meat quality of lambs fattened with spelt. Lambs consumed various feed mixtures (1000 g day−1 lamb−1): I—control group; II—group with 10% dehulled spelt; III—group with 20% dehulled spelt. In the blood, the concentrations of minerals (calcium, phosphorus, magnesium, and iron), biochemical parameters (urea, glucose, total proteins, albumin, globulin, cholesterol, triglycerides, high-density lipoprotein, low-density lipoprotein, ß-hydroxybutyrate, non-esterified fatty acids, glutathione peroxidase, and superoxide dismutase), and hepatic enzymes (alanine aminotransferase, aspartate aminotransferase, alkaline phosphatase, gamma-glutamyltransferase, and creatine kinase) were determined. After slaughter, carcass development was measured. Samples of musculus semimembranosus were taken, of which the physical properties were analyzed. By analyzing the production properties of the lambs, we found that the slaughter characteristics of the lamb carcasses and the physical properties of the lamb meat as well as most biochemical indicators and enzymes did not significantly differ. The concentrations of albumin were increased in the groups with 10% and 20% spelt, as was the activity of alkaline phosphatase in the group with 20% spelt. The presented results indicate that spelt is an appropriate ingredient in the diet for weaned lambs.

    Abstract: In this study, we aimed to evaluate the effects of different proportions of red corn rich in anthocyanins on the diet of fattening lambs considering their productive traits, blood metabolic profile, and antioxidative status. The research was carried out with 30 Merinolandschaf lambs, 90 days old and weaned. The feed mixture for lambs (n = 10) of the control group contained yellow corn, while in the feed mixture of experimental group I (n = 10), yellow corn was replaced with red corn at 50% (RC50), and in experimental group II (n = 10), yellow corn was 100% replaced with red corn (RC100). An automatic three-part differential haematology analyser was used to determine haematological parameters in whole blood, and biochemical parameters were determined in blood serum using a biochemical analyser. A diet containing red corn did not affect productive traits or the majority of the examined parameters. However, higher blood haemoglobin content, increased aspartate aminotransferase and creatine kinase activity, and decreased glucose and non-esterified fatty acids concentrations were found in the serum of RC100 lambs. These results indicate a positive effect of red corn rich in anthocyanins on the metabolic profile without any changes in the productive traits of lambs.

    Abstract: Due to the high content of crude protein and high concentration of unsaturated fatty acids, pumpkin seed cake (PSC) could be a good quality feedstuff for ruminants, while extruded linseed (ELS) has already shown some beneficial effect on fatty acids proportion of goat milk. Besides, lactation is the most demanding period when monitoring the metabolic condition of animal. Therefore, the aim of this study was to determine the effect of PSC and ELS replacing soybean meal in diets of dairy goats on blood haemato-chemical parameters and milk quality. A 28 lactating French Alpine dairy goats were monitored within 20 days in early lactation. Diet of each groups had a balanced content of energy and crude protein, and a slight difference in lipid content. Goats in control group (n = 9) received soybean meal and extruded soybean. In experimental groups soybean was partially replaced with ELS (n = 10) or completely with PSC (n = 9). Dietary treatments had no effect on haemato-chemical parameters, although PSC increased concentration of globulins in serum. PSC lowered linoleic acid compared to control. ELS increased proportion of α-linolenic acid, eicosapentaenoic acid, and total n-3 fatty acids in milk. Positive correlations were found between non-esterified fatty acids (NEFA) and ratio C18:1/C15:0, NEFA and ratio C17:0/C15:0, as well as β-hydroxybutyrate and ratio C17:0/C15:0. The replacement of soybean meal with PSC or partially with ELS is feasible with respect to haemato-chemical parameters of early lactating dairy goats, while ELS had much beneficial effect on fatty acids compared to PSC.

    Abstract: Cilj rada bio je utvrditi acidobaznu ravnotežu u krvi lakon ovaca tijekom različitih stadija laktacije. Za istraživanje je odabrano 30 lakon ovaca u laktaciji, koje su praćene u ranome (60. dan), srednjem (120. dan) i kasnom stadiju laktacije (180. dan). U krvnoj plazmi utvrđeni su pH, parcijalni tlak ugljičnoga dioksida (pCO2), parcijalni tlak kisika (pO2), ukupni tlak ugljičnoga dioksida (tCO2), saturacija kisikom (sO2), stvarni i standardni višak baza (Ea i Ecf) i elektroliti (Na+, K+, Ca2+, Cl- i HCO3 - – bikarbonati), a u serumu ukupni proteini (TP) i albumini (ALB). Također su izračunane sljedeće vrijednosti: razlika jakih iona (SID), z-vrijednost, anionski procjep (AG), slabi anioni i kationi (ATOTtp and ATOTalb), jaki ionski procjep (SIG), nemjereni anioni (XA) i koncentracije globulina. Utvrđen je značajan utjecaj stadija laktacije na većinu pokazatelja acidobazne ravnoteže u krvi lakon ovaca, osim sadržaja pCO2, Cl- , z-vrijednosti i SID-a. Utvrđeno je značajno povećanje sadržaja pO2, sO2, ATOTtp, ATOTalb, AG, SIGalb, SIGtp, XA, Na+, ukupnih proteina i albumina te smanjenje koncentracija K+ i Ca2+ u krvi lakon ovaca kako je laktacija odmicala kraju. Tijekom srednjega stadija laktacije utvrđene su značajne promjene većine pokazatelja acidobazne ravnoteže krvi lakon ovce u odnosu na druge stadije. Stadij laktacije može značajno utjecati na pokazatelje acidobazne ravnoteže krvi lakon ovaca te bi za potpuniju sliku pri izradi acidobazne ravnoteže trebalo uključiti i izračun SIG-a, viška baza (BE) i nemjerenih aniona (XA).

    Abstract: Due to its climatic, geographical and traditional aspects, the Republic of Croatia has a rich tradition of production and preparation of various cured meat products that are characterized by a special quality and traditional method of production. Ham and prosciutto are thus among the most famous cured meat products in Croatia, and are categorized as permanent cured meat pork products. The difference between ham and prosciutto is in the processing of the legs and the production technology. The most famous is Slavonian ham, which is made from processed pork leg with removed sacrum and pelvic bones, whereas the thigh lower edge is semi circularly rounded to about 6 cm from the femoral head. Afterwards, salt (wet salting/brine) is rubbed into the leg or the leg is immersed in brine (dry salting/brine), for 30 days followed by smoking by wood smoke or by ash, beech, hornbeam or oak sawdust smoke. After smoking follows the final stage of hams maturing which takes place in special rooms with a optimal microclimate for 7-8 months, depending on the hem weight. The most famous Croatian prosciuttos are: Dalmatian prosciutto, Istrian prosciutto, Drniš prosciutto and Krk prosciutto. These hams differ in production technology, and according to the Ordinance on meat products which is in force in the Republic of Croatia, all these hams are pork leg products with bones, with or without skin and subcutaneous fat, with or without legs, and pelvic bones, without tail, with or without the addition of spices, preserved by dry salting or brining, with or without smoking and subjected to drying and maturing processes for at least 9 months. In order to produce quality ham or prosciutto, it is necessary to provide a quality basic raw material (ham meat). The quality of pig carcasses is affected by genetic (pig’s genotype) and a number of paragenetic factors: nutrition, housing system, age of pigs, sex, castration, final body weight of pigs, procedure with pigs before slaughter, ham and prosciutto production technology (primary processing of hams, salting, smoking, ripening). The aim of this paper is to show how the combined action of these factors affects the quality of hams and prosciutto.

    Abstract: Abstract. In recent years, there has been globally increasing interest in dairy sheep breeding, including Lacaune sheep, which is supported by a high demand for sheep's milk on the market. This paper elaborates on the influence of a sheep's lactation stage on the physical and chemical properties, hygienic quality and content of fatty acids in milk produced by Lacaune sheep kept in intensive breeding. The research was conducted on 30 Lacaune sheep, which were tested in the early (60th day), middle (120th day) and late (180th day) stages of lactation. Density, freezing point and titration acidity were determined by applying the infrared spectrometry method, and indicators of the hygienic quality of milk, such as somatic cell count (SCC), were determined by the fluoro-opto-electronic method, and the total count of aerobic mesophilic bacteria (CFU) was determined by the flow cytometry method. The fatty acid profile of feed and milk was obtained by gas–liquid chromatography. Depending on the stage of lactation, results referring to the chemical composition of Lacaune sheep's milk showed a significant increase in the content of fat, protein, total dry matter and casein together with a significant decrease in the content of lactose in the late stage of lactation. There was also a significant increase confirmed for the concentration of urea and the freezing point in milk along with the lactation progress. Depending on the stage of lactation, milk yield in Lacaune sheep significantly decreased as lactation progressed. Analysis of the fatty acid composition in milk of Lacaune sheep proved a significant decrease in the concentrations of C4 : 0, C6 : 0, C11 : 0, C12 : 0, C13 : 0, C15 : 0, C17 : 1, C18 : 2n6 and C18 : 3n6 as well as the n6 concentrations and the n6 / n3 ratio. The opposite trend was observed for concentrations of C10 : 0, C14 : 1, C16 : 0, C16 : 1, C18 : 0, C20 : 2, C18 : 3n3, C20 : 3n6, C20 : 5n3 and C22 : 6n3 as well as for the n3 concentrations. When compared to the early lactation stage, the C18 : 3n6 and n6 concentrations were significantly lower in the late lactation stage, while the C20 : 2 and C20 : 5n3 concentrations were significantly lower in the middle lactation stage when compared to the late lactation stage. There were many significant positive and negative correlations determined between the researched properties of milk. The research results obtained with Lacaune sheep's milk can be compared to the results of other studies, except for the lower content of milk fat. This confirms the good adaptability of Lacaune sheep to different breeding conditions and the necessity to provide sheep with quality pastures for grazing.

    Abstract: The aim of the research was to determine the age-related hematological and biochemical parameters in Croatian white goats in a traditional Mediterranean production system. The 36 lactating Croatian white goats were divided into three groups with 12 goats each, according to age: group I (1-2 years old), group II (3-5 years) and group III ( 〉 5 years). The mean corpuscular haemoglobin concentration (334 g/L) and lymphocytes (73.71%), as well as the concentration of iron (Fe 25.17 μmol/L) in the blood were higher, while the concentration of urea (3.86 mmol/L) was lower in group I compared to group III. The results of the present study are the first published blood analysis (hematological and biochemical parameters) for the Croatian white goat breed, and can be useful for understanding the metabolism and health status of this breed of goats, which helps in their conservation, promotion and breeding improvement.
