    Abstract: Abstract. In recent years, there has been globally increasing interest in dairy sheep breeding, including Lacaune sheep, which is supported by a high demand for sheep's milk on the market. This paper elaborates on the influence of a sheep's lactation stage on the physical and chemical properties, hygienic quality and content of fatty acids in milk produced by Lacaune sheep kept in intensive breeding. The research was conducted on 30 Lacaune sheep, which were tested in the early (60th day), middle (120th day) and late (180th day) stages of lactation. Density, freezing point and titration acidity were determined by applying the infrared spectrometry method, and indicators of the hygienic quality of milk, such as somatic cell count (SCC), were determined by the fluoro-opto-electronic method, and the total count of aerobic mesophilic bacteria (CFU) was determined by the flow cytometry method. The fatty acid profile of feed and milk was obtained by gas–liquid chromatography. Depending on the stage of lactation, results referring to the chemical composition of Lacaune sheep's milk showed a significant increase in the content of fat, protein, total dry matter and casein together with a significant decrease in the content of lactose in the late stage of lactation. There was also a significant increase confirmed for the concentration of urea and the freezing point in milk along with the lactation progress. Depending on the stage of lactation, milk yield in Lacaune sheep significantly decreased as lactation progressed. Analysis of the fatty acid composition in milk of Lacaune sheep proved a significant decrease in the concentrations of C4 : 0, C6 : 0, C11 : 0, C12 : 0, C13 : 0, C15 : 0, C17 : 1, C18 : 2n6 and C18 : 3n6 as well as the n6 concentrations and the n6 / n3 ratio. The opposite trend was observed for concentrations of C10 : 0, C14 : 1, C16 : 0, C16 : 1, C18 : 0, C20 : 2, C18 : 3n3, C20 : 3n6, C20 : 5n3 and C22 : 6n3 as well as for the n3 concentrations. When compared to the early lactation stage, the C18 : 3n6 and n6 concentrations were significantly lower in the late lactation stage, while the C20 : 2 and C20 : 5n3 concentrations were significantly lower in the middle lactation stage when compared to the late lactation stage. There were many significant positive and negative correlations determined between the researched properties of milk. The research results obtained with Lacaune sheep's milk can be compared to the results of other studies, except for the lower content of milk fat. This confirms the good adaptability of Lacaune sheep to different breeding conditions and the necessity to provide sheep with quality pastures for grazing.

    Abstract: The aim of the research was to determine the age-related hematological and biochemical parameters in Croatian white goats in a traditional Mediterranean production system. The 36 lactating Croatian white goats were divided into three groups with 12 goats each, according to age: group I (1-2 years old), group II (3-5 years) and group III ( 〉 5 years). The mean corpuscular haemoglobin concentration (334 g/L) and lymphocytes (73.71%), as well as the concentration of iron (Fe 25.17 μmol/L) in the blood were higher, while the concentration of urea (3.86 mmol/L) was lower in group I compared to group III. The results of the present study are the first published blood analysis (hematological and biochemical parameters) for the Croatian white goat breed, and can be useful for understanding the metabolism and health status of this breed of goats, which helps in their conservation, promotion and breeding improvement.

    Abstract: The aim of the present research was to determine the hematological and biochemical parameters of the Travnik pramenka ewes during lactation. Thirty‐six ewes in average age of 3-5 years were included in the research. They were monitored in three stages of lactation: early, medium, and late stage. The WBC and RBC, HGB concentration, HCT and MCH values increased significantly as lactation progressed, while significant decrease of MCV and MCHC was determined in blood. HCT was slightly higher in the early compared to late stage, and the MCH in the medium compared to the late stage of lactation. A significant increase in the concentrations of Ca, P, Mg, Na and Cl, as well as a decrease of the Fe concentration was determined. As lactation progressed, the concentrations of urea, total proteins, albumin, globulin and BHB increased, as well as ALT activity. Contrary, concentrations of glucose and NEFA decreased, as well as GGT activity. Obtained results may help in monitoring the health and nutritional status of Travnik ewes. The effect of lactation stage needs to be included in the model when preparing the reference values for the blood parameters of Travnik pramenka ewes, particularly for RBC profiles, energy, and protein metabolites as well as liver enzymes.

    Abstract: Selenium is an important trace element that participates in numerous physiological and metabolic processes in animals and human organism. Many areas in the world are known for its lack of selenium in soil, and in crops/products, which is then reflected in its deficiency in animals and humans. In recent years, more attention has been paid to finding the optimal method/procedure in order to enrich the product with selenium. By consuming animal products enriched with selenium in the human diet, it is possible to meet their nutritional needs for selenium. By analyzing the available literature, the aim of this paper is to research: (I) the importance of selenium for animals and humans; (II) the selenium content in ruminants ´ milk with special emphasis on small ruminants milk (sheep and goats); (III) methods/procedures in enrichment of small ruminants´ milk with selenium, especially those with an emphasis on nutritional modeling and natural methods; and (IV) some of the possibilities of using milk enriched with selenium in human nutrition. In conclusion, the methods/procedures aimed at enrichment of small ruminants milk with selenium can be recommended. This includes the addition of organic sources of selenium in the diet, or biofortification of feed with selenium, also known as a natural process which may lead to positive effects on animal health, as well as positive effects on humans when consuming milk enriched with selenium, especially when selenium deficiency is prolonged.

    Abstract: Cilj ovog istraživanja bio je utvrditi utjecaj dodatka selena (organskog, anorganskog) u obrocima kasno gravidnih ovaca i ovaca u laktaciji na pokazatelje acidobazne ravnoteže. Istraživanje je provedeno na 30 gravidnih ovaca Merinolandschaf pasmine. Ovce su podijeljene u tri skupine po 10 životinja. Istraživanje je počelo u jesen, odabirom kasno gravidnih ovaca (90. dan gravidnosti) s jednim janjetom i nastavljeno tijekom proljeća sljedeće godine s istim ovcama nakon janjenja u laktaciji. Krmna smjesa kontrolne skupine ovaca (skupina I) bila je bez dodatka selena, krmna smjesa druge skupine ovaca (skupina II) bila je obogaćena dodatkom 0,3 mg/kg organskog selena, a krmna smjesa treće skupine ovaca (skupina III) bila je obogaćena dodatkom 0,3 mg/kg anorganskog selena. U krvi visoko gravidnih ovaca i ovaca u laktaciji utvrđeni su sljedeći pokazatelji: pH, plinovi (pCO2, pO2), elektroliti (Ca, Na+, K+, Cl- i HCO3-), te izračunata z - vrijednost, BEfw, BECl -, BEalb, anionski procijep (AG) i jaka ionska razlika (SID). Većina pokazatelja acidobazne ravnoteže u sve tri skupine bila je unutar referentnih vrijednosti, a dodatak selena, posebno anorganskog oblika u obrocima ovaca pomaknuo je njihove vrijednosti prema referentnim i izbjegao acido-baznu neravnotežu i povezane poremećaje, koji mogu uzrokovati smanjenu produktivnost i ekonomske rezultate. Utvrđeni pokazatelji acido bazne ravnoteže znak su odgovarajuće hranidbe ovaca i njihove pravovremene i dobre prilagodbe u zahtjevnim reprodukcijskim stanjima.

    Abstract: A total of 96 Black Slavonian pigs were subjected to the research, in which they were split into 6 groups. Three groups (100, 120, and 130 kg) were fed a higher level (HL) of crude protein in fodder mixtures (CPFM), and three groups (100, 120, and 130 kg) were fed a lower level (LL) of CPFM. After the pigs were slaughtered, pig carcasses were dissected and the meat and halves quality indicators were determined. According to the influence of the final body weight (BW) and nutrition of pigs on the quality of their halves, meat, and dry fermented sausages (kulens), it was concluded that feeding an HL of CPFM increased the proportion of loin, belly rib part, and chin and increased the muscle tissue in the ham, loin, shoulder, neck, and belly rib parts. However, the chemical composition of the meat and the sensory properties of the kulen were not significantly affected by feeding the pigs an HL of CPFM. It was concluded that, by selecting the final BW and adjusting the feeding strategies for pigs, it is possible to modify the conformation and composition of pig carcasses and the quality of meat and kulens produced from the Black Slavonian pig, which is important because consumers prefer products with certain characteristics and of a standard quality and are ready to pay for them.

    Abstract: The addition of oilseeds and their cakes to the diets of lactating dairy goats is an alternative to supplemental feeding, which improves the lipid profile of goat cheeses. The objective of the present study was to evaluate the effect of a diet containing extruded linseed or pumpkin seed cake on the fatty acid profile of semi-hard cheese made from goat milk. The research was carried out with 28 French Alpine goats fed the following diets: 1—basal diet based on extruded soybean and soybean meal; 2—basal diet with 90 g/kg DM extruded linseed (ELS); and 3—basal diet with 160 g/kg DM pumpkin seed cake (PSC). Bulk milk from three separated milk tanks at three samplings was used for the manufacture of four traditional semi-hard cheeses from each milk tank at each sampling on the family farm. The ELS and PSC diets increased fat content in the cheese. The ELS feeding increased the proportion of C18:1 c9, C18:2 c9t11, and C18:3 n-3 in cheese and lowered C8:0, C6:0, and C16:0, while PSC resulted in the highest C18:2 n-6 proportions in the cheese. The health-promoting index was the highest in the cheese of ELS. The ELS had a contribution to higher nutritional and health quality of semi-hard traditional goat cheeses, thus representing a food with health-promoting properties.

    Abstract: This study investigated the effect of dietary selenium supplementation (organic and inorganic) of late-gestation ewes on blood selenium concentrations and metabolic and antioxidant status indicators in ewes and their lambs. In addition, the efficacy of selenium transfer from ewes to lambs during the suckling period was determined. The study was conducted on 30 Merinolandschaf ewes and their lambs and lasted four months. The feed mixture of the control group (group I) contained no added selenium, while the feed mixture of group II was enriched with 0.3 mg/kg of organic selenium sources and the third group with 0.3 mg/kg of inorganic selenium sources. In ewes and their lambs, selenium supplementation significantly (p 〈 0.01; p 〈 0.05) increased selenium concentration, glutathione peroxidase, and superoxide dismutase activity and decreased malondialdehyde concentration compared to the control group. Selenium supplementation had a positive effect on metabolism and hematological indicators in lambs. A positive correlation was found between antioxidant indicators in the whole blood of ewes and lambs. The good transfer of selenium from ewes to lambs was complemented by higher correlation coefficients when the feed mixture was supplemented with organic compared to inorganic selenium.

    Abstract: Oilseeds and by-products of oil production are a good quality source of energy and proteins in ruminants´ nutrition. Therefore, the aim of the present study was to determine the production traits of goat kids fed on feed mixtures containing pumpkin seed cake and extruded linseed. The study was carried out on 31 goat kids of the French Alpine breed. After one month, the kids were gradually weaned from the mothers, by reducing suckling and including feed mixtures and hay (clover-grass mixture) ad libitum. Goat kids were fed on feed mixture containing soybean meal and extruded soybean (control) as protein feedstuffs, then a mixture containing 16% pumpkin seed cake (PB16) with complete soybean replacement, and a mixture containing 9% extruded linseeds (EL 9) with partial replacement of soybean. Production traits of goat kids, such as average weight gain and exterior characteristics, were determined at the age of 32, 60 and 87 days. The estimated total average daily weight gain of goat kids (32-87 days of age) was 145.64 g in control group, 163.77 g in PB16 and 164.21 g in EL 9 group, with no significant differences. A significant increase in withers height was found in PB16 and EL 9 goat kids aged 60 days and in PB16 goat kids aged 87 days compared to the control group, with no significant differences in physical development indices. The results of the present study viewed the possibility of using the pumpkin seed cake and extruded linseed as a source of proteins and fat in feed mixtures, with satisfactory production traits in goat kids.
