Abstract A new method to detect the adulteration of pasteurised milk with whey is described. The method is based an the determination of Casein-bound phosphorus (P cas) and the protein nitrogen content in milk. By using a mean Peas content (0.85 g P/100 g casein), a Kjeldahl factor of 6.34 and protein N, the relative casein-N content (casein N/protein N × 100) can be estimated. Over a period of one year the variation in the phosphorus factor of dried skimmed milk samples amounted to 2.9%. In order to calculate the percentage of added whey, a standard curve has been prepared in which the relative casein content is plotted against the corresponding whey percentage. The results of 26 analyses on genuine pasteurised milk (P cas =21.7 mg/ 100 ml; casein N/protein N=80.9%) and on 25 whey samples were used for the standard curve. In laboratory-made blends of pasteurised milk and cheese whey (5%, 10%, 20% and 30%), the estimated percentage of whey varied between −1.2% and +2.9% from the actual value. The analysis of nine samples from the Brazilian market showed that four samples were clearly adulterated with cheese whey. Sweet and/or acid whey addition will be detected by the proposed method.

Zusammenfassung Es wird eine neue Methode zum Nachweis einer Verfälschung von pasteurisierter Milch mit Molke beschrieben. Die Methode beruht auf der Bestimmung des caseingebundenen Phosphorund des Eiweißstickstoffgehaltes in der Milchprobe. Mit Hilfe des mittleren Phosphorgehaltes des Caseins (0,85 g P/100 g Casein) und des entsprechenden Kjeldahlfaktors (6,34) läßt sich der relative Caseinstickstoffgehalt (Casein-N/Eiweiß-N × 100) der Probe ermitteln. Untersuchungen an unverfälschtem Magermilchpulver ergaben, daß im Verlaufe eines Jahres der Phosphorgehalt des Caseins um 2,9% varüerte. Für die Berechnung des Molkenzusatzes in der Milch wird eine Standardkurve erstellt, die den relativen Caseingehalt in Abhängigkeit vom Molkenanteil aufzeigt. Für die Erstellung der Kurve wurden 26 unverfälschte pasteurisierte Milchproben und 25 Molkeproben untersucht. Ein mittlerer Gehalt an caseingebundenem Phosphor von 21,8±1,7 mg/ 100 ml wurde bestimmt; der mittlere Casein-N im Eiweiß-N betrug dabei 80,9%. In den im Labor aus pasteurisierter Milch und Molke hergestellten Mischungen (5, 10, 20 und 30%) wich der ermittelte Molkeanteil von −1,2 bis +2,9 vom tatsächlichen Wert ab. In 4 von insgesamt 9 brasilianischen untersuchten pasteurisierten Proben konnte ein Molkezusatz deutlich nachgewiesen werden. Die beschriebene Methode erfaßt Süß- und/oder Sauermolkenzusatz.
