    Abstract: European whitefish are widely used for artificial reproduction in aquaculture. Relevant is the search for alternative solutions for protein supplements in the composition of animal feed for its cultivation. A promising source of valu-able protein is fish waste from canning industries. In the Kaliningrad region, 80% of Russian canned food "Sprats in oil" is produced. The daily amount of sprat waste is 2-10 tons. The use of protein products of hydrolysis of smoked sprat heads instead of a part of fishmeal in compound feeds for whitefish juveniles was studied in this work. Hy-drolysis was carried out by a high-temperature method in an aqueous medium to obtain two types of protein sup-plements. In the first experiments, a 5% low molecular weight peptide supplement with a protein content of 82.7% was introduced into the model feed instead of the corresponding amount of fishmeal. In the second series of exper-iments, a 10% protein-mineral supplement was introduced with a protein content of 54.5% and mineral substances of 24.0%. The experiments were carried out in a closed aquaculture system based on AtlantNIRO. After 56 days of feeding, the fish breeding, morphobiological and organosomatic parameters of the fish were comparatively studied. . The promising potential of additives as feed components has been established. The introduction of a 5% peptide additive led to an increase in the fry survival rate. The use of a 10% protein-mineral supplement resulted in higher growth rates and lower feed ratios. In both experiments, there was no negative effect on the growth and morpho-physiology of the studied fish. For more reliable results, further study of alternative amounts of inclusion of these additives in the feed is required.

    Abstract: Many fish waste remaining during the cutting of fish (heads, entrails, bones) contain an increased amount of fat, which has a high biological value. Obtaining edible fat from them is not always possible due to safety requirements, and the production of feed fishmeal with standard quality indicators is difficult. The increased fat content of raw materials and the technology parameters contribute to the rapid rancidity of fat in flour and the formation of toxic substances. This raw material can be used to obtain fish oil with subsequent recommendations for use, taking into account the indicators of oxidative and hydrolytic spoilage and in accordance with the requirements of the standards. When the content of undesirable products is exceeded, it can be used for technical purposes or in industrial biotechnology, as a substrate for microbial synthesis of biodegradable biopolymers such as polyhydroxyalkanoates. In this paper, a thermal method for separating fat from the heads of mackerel and hot-smoked sprats, as waste products from fish canning enterprises in the Kaliningrad region, was studied. A high fat content in raw materials (respectively 24.9 and 20.3%) and its characteristics were established. The rational parameters of the hydromodulus (1:0.5 and 1:1.0) were determined during thermolysis of crushed sprat and mackerel raw materials, respectively, at a stirrer rotation speed in the thermoreactor of 15 rpm. Rational ranges of temperature and duration of thermal release of fat were determined in experiments using mathematical planning. The optimization parameters were the yield of fat, its acid and peroxide numbers. The maximum yield of fat from fish heads is achieved at a temperature of 73-94°C for 2 hours 15 minutes - 2 hours 45 minutes. However, at the same time, fat has increased values of acid and peroxide numbers. Obtaining high-quality fat with food indicators is recommended at a temperature of 68 - 83 ° C for 43 min. – 1 h 22 minutes.

    Abstract: Prior studies have measured the effects on the Growth and Survival of supplementing fish diets with fish protein hydrolysate (FPH) as an alternative protein source. Initial results have suggested a positive impact on fish health and this study aimed to investigate specifically the impact of a 5% substitution of FPH on European Whitefish juveniles hematological parameters. A 56-day manual feeding trial was conducted on two triplicate groups of 500 fish, consulting of a control diet group and 5% FPH diet group. A feeding rate of 3% of total biomass was applied with feeding being carried out three times a day. The higher concentration of hemoglobin (60.73±3.55 g/L vs. 51.47±2.52 g/L), color index (1.62±0.15 vs. 1.23±0,07) and mean corpuscular hemoglobin (56.64±3.49 g/L vs. 45.75±2.11 g/L), as well as the lower level of oxyphilic normoblasts (1.33±0.26 % vs. 2.08±0.32 %) in the blood of fish in the experimental group, indicate active metabolic processes occurring in their bodies and better oxygen supply to their tissues. The significantly higher concentration of total protein in the blood serum (48.29±1.48 g/L vs. 35.35±1.43 g/L) of this group of fish suggests better food assimilation in their organism. The hematological data obtained during the study indicate the positive influence of the fish protein hydrolysate on the fish organism.

    Abstract: The authors study three fractions obtained as a result of hydrolysis of smoked sprat heads (under temperature of 130oC and presser of 0.25 MPa) – fat, protein water-soluble, and protein-and-mineral ones. Waste from sprat production of two fish canning complexes of the Kaliningrad Region - “RosCon” and “Kolkhoz for the Motherland” - was used as raw material. Hydrolysis was carried out in an aqueous medium in two ways - with preliminary separation of fat and without this operation. The protein fraction was sublimated and its quantitative and qualitative indices were examined - mass yield, solubility, chemical composition and molecular fractional composition of the obtained peptide fractions were determined. The output of sublimated protein fractions is practically independent of the type of raw material and the method of pre-treatment and is 6.47.9% of the mass of raw materials. The chemical composition of protein fractions varies widely in terms of fat (1.4–8.3%), minerals (9.8–13.4%) and proteins (72.1–80.2%). The solubility of the peptide fractions ranged from 91-98%. The molecular weight assessment results showed a high content of a low molecular weight fraction of peptides with an MM of less than 10 kDa in all experimental samples (about 38%). This indicates a high digestibility and biological value of the obtained peptide compositions. Sublimated peptide compositions had typical organoleptic characteristics, pleasant aroma and taste of smoked fish. Ключевые

    Abstract: This research analyzes the economic indicators of the fishery complex of the Kaliningrad region in recent years. The introduction of modern biotechnological solutions in the fish processing sector is substantiated. At present, the industry focuses on oceanic and coastal fishing, large fish complexes are leading in fish processing. Food product groups are mainly represented by chilled and frozen semi-finished products. Among food fish products, the production of sterilized canned food predominates; in smaller quantities, preserves, salted, smoked, dried and dried fish products are produced. The fish factories practically do not process fish by-products and there is no production of fish meal. To improve the economic performance of the industry, it is promising to use innovative biotechnologies and advanced foreign experience, which allow processing the extracted raw materials with maximum added value. The Strategy for the Development of the Fisheries Industry of the Russian Federation until 2030, adopted in November 2019, outlines the prospects for the development of marine biotechnology in key segments - aquaculture, production of functional and biologically active products, processing of by-products. The article presents the volumes and problems of fish by-products processing accumulating at fish processing enterprises of the region. A complex scheme of biotechnological by-products processing with the production of valuable biologically active substances (proteins, lipids, mineral substances) is proposed. The technology and production line for the production of protein, protein-mineral and lipid preparations from secondary fish raw materials are described. A modular implementation of biotechnology in marine conditions is proposed. The economic calculation from the introduction of innovative biotechnology in the processing of secondary fat-containing fish raw materials is presented.

    Abstract: The perspective of the production of domestic compound feed for the development of industrial aquaculture in Russia is shown. Alternative sources of protein in mixed fodder for salmon and sturgeon have been investigated. The advantages of using protein hydrolysates instead of a part of fishmeal in compound feed are described. The advantages of protein hydrolysates from fish by-products are considered, the chemical composition and molecular fractional composition of sublimated protein hydrolysates obtained by enzymatic and thermal pathways from sardinella scales and ridges are studied. The presence in hydrolysates of 53.3 - 97.7% of low molecular weight peptides with a molecular weight of less than 10 kDa with a total protein content of 80.8-94.1% was established. Indicators of amino acid balance (scor) of hydrolyzates of scales and ridges of sardinella were calculated in relation to the established requirements for amino acids in salmonids.
